Select the mesh and make sure the mesh tool is active.
Then just double click to add a node which you can then select and elevate.

To add a contour draw a spline first that crosses over the boundaries and then with the mesh selected (and the tool active) magic wand the spline.
Using a spline means you can control the number of nodes on the contour.
The contours on some surveys are made up from hundreds of small lines which will convert to hundreds of nodes if you magic wand those.
