Working in Gray Scale in Modeling space?

Is it possible for me to turn the modeling space into gray scale and work in that setting? Im asking this because I need to create some color fills that will print in contrast to each other for a presentation and then once revert back to the color settings it will also print appropriately for color prints.

I hope this makes sense and if there's a better way to do this, let me know.

Read about "Pen Tables". Simply create a pen table for each type of view that you require. A pen might be in color in one table, but gray in another...
