AFAIK the only way is manually going to every single window and turning it off. A keyboard shortcut helps!
There's no global switch for this that I know of. Wish there was!

Quick and dirty fix: view > grid & editing plane options > grids & background
Change both colours to be the same. Grid is still there, you just don't see it.
Other option, open a view, go to view > grid display.
If you do this in the template, any new project based on the template will have grids off.

I tried (and probably made a mistake), but anytime I open a detail, worksheet, new section ... the grid is always there!
Doesn't anybody know how to disable by the default when launching archicad?

Grid can be turned on and off for all views individually. You could have grid on in details and off in floorplans, for example. So open all different views and turn it off.
I never understood the problems with grid. My colleague hates it, for me it just gives a sense of the scale of things.
