Try some of the other glass options. The surface library offers a lot of glass.
If you go in to Surface settings, select your glass surface and hit the 'New...' button you can 'Replace Settings from Catalog'.
I am using the 'glass clear' or whatever the INT (or your local) variant is called, since my library is translated to Dutch.
That one doesn't look plastic in my renders, in my opinion. With that one you can turn off the bump channel if you don't like the distorted reflecions on large surfaces.
I do model on a large circle of terrain to mimick a horizon, so maybe that helps with reflections looking better.
Regarding reflection depth, that is similar to ray depth, except how many of the transparant layers show reflections on their surface. For a scene with a lot of glass (like the glass maze I mentioned), having a lower value would get rid of some 'clutter' on the glass surfaces.
