Is there a way to list/edit zone cover fill pens in the schedules?
The only pen I found in additional parameters was for zone stamps.

If the PEN color is not a parameter of the Zone Stamp then you will not be able to schedule it in the IS. The Cover Fill Pens are not parameters of the Zone Stamp, they are element settings (from the Zone Settings dialog)
