Detail drawing

I'm a second year building engineer student. For a school project i need to design a building and make a lot of construction drawings. The design is ready and i made all of the floorplans etc. Another requirement is 16 detail drawing.

My question is: Which maps do you use for detail drawing? Do you draw in the project map or in the view map and in which map do you add the text and the dimensions? Project, view or layout. It's is really confusing what the real differences are between the maps and how you can use this differences to your advantage.

Alternatively, here's an old video. The fundamentals haven't changed, so it's still valid.
