Is there a way to dynamically stretch dimensions (i hate to say this) like in Autocad? I am pretty new to Archicad so I am still struggling.

You can select a dimension and Command-Click (or CTRL-Click for PC) to introduce new nodes either within or beyond the extents of the existing dim.
