How do we label MEP elements in Archicad 27? Where can I find the label types for MEP in Archicad 27?

It's not possible currently.
If you need MEP stay with AC 26.

You can but not that easy I guess.

Labeling functionality for the new MEP Route elements will come in Archicad 27.2.0. We are introducing dedicated MEP Properties which can be used for defining the Autotext Label to personal preference.

You can use the Auto Text feature from Label tool as shown in the attached image. Also, if you are using Classification & Properties then you can club these labels to create your custom labels. Hope this will be helpful.
