I admit that I don't use the "out-of-the-box" library of doors and windows. I haven't heard of any major bugs in that door object (that doesn't mean that there aren't any). I do know if you change parameters with GUI interfaces in multiple objects at the same time may cause other GUI parameters to reset or change (depending on the object).
Are you editing a single door or multiples of the same door?

Actually I was changing multiple doors in the 3D window. I can just change the door from no grill to grill and back and it sticks for a little while. It just seems that the door likes to be a slab door! Perhaps tomorrow I will have time to try a screen shot. I sure that this also happened when changing one door at a time. For a while I wasn't sure what was happening. Thought I just hadn't set the door parameters properly.

This is a known bug (or at least it should be as I have reported it more than once!)....
Yes, the key is to simply open up settings box and hit OK... you don't actually have to change anything. It is hit and miss... Some doors will NEVER show up. It almost appears to me that "dumbed down" version is overriding... like telling the 3d to go to SIMPLE or something. With an ARCH DOOR the arched part is actually a triangle instead of a smooth arch.

I've also been having problems with 8.1 doors. The glass in these doors changes to the frame material whenever I alter the 3-D view. If I then select the door, open the dialog box, and just click okay, the door reverts back to a glass panel. The door will look fine until the 3-D window changes, then I once again need to open and close the dialog box without changing any settings.

I just sent a screen shot to GS.. It is becoming more frequent now...
If you wouldn't mind, look more closely at your doors when this happens.... For me, it is not just the material changing.... It is acutally a SLAB Door instead of the French door... For ArchTop doors, the arch resolution changes to 2 so I get a Triangle top door instead. The hardware also disappears. All reappear after opening and closing the settings dialog w/o changes.
