To tell you the truth, I have never modified any of the default settings in the NVidia Settings Dialog. I always figured they are probably fine the way they are.
If you go to the 3D Window Settings Dialog, select OpenGL for the 3D Engine and click the Options button, the appearing Dialog is the place where you can control how the 3D Window is displayed in OpenGL. This is the only place I would go to change these settings.
Another place where you can set some graphics card-related settings is the Advanced Redraw Options page of the Work Environment Dialog. I usually don't change any of those default settings either, but enabling 2D Drawing antialiasing is a good idea because if will draw curves very nicely in Viewpoints.
