How can I change these settings that now are blocked?

They are not "blocked" Just press the selection on the left that shows the sides of the wall. This way you wil activate the options.

You should add a Signature to your Profile (click the Profile button near the top of this page) with your ArchiCAD version and operating system (see mine for an example) for more accurate help in this forum.

You would need to click on the icon on the left to activate the surface override.

It will be highlighted in blue.
