For the new Building Materials in 17... you would have to assign a different building material to that one wall, possibly creating a new building material by duplicating an existing one and modifying it. This change in 17 is a huge change - and along with other new features - warrants spending time learning 17 before migrating a project. There are lots of short instructional videos as well as the documentation resources. Since you say you're short of time... stick with 16 or earlier for now.
The new Building Materials are much more powerful, consistent and definitely more BIM than the way things were done previously. But, this big change makes it difficult to just move a project to 17 and continue working in the same way as in the past. (Lots of people upgrade every year and never use the new features or notice that they're there...not an option with 17.)
PS Your signature still says AC 13, and does not indicate your OS. Issues such as the pet palette thing can be OS dependent, so you might edit your signature ("Profile" text link near top right of this page) to include more info.
Alternatively, if you just want to change the outer surface of the Wall - and not it's Building Material/Composite/Profile, you can override the surfaces. Go to the Model panel and push in the buttons in front of the surface popups. Under the heading "Override Surfaces".I see that header, but everything is grayed out so I can't click on anything.

It is worthwhile to watch the many videos on the AC17 changes and also you can read the migration guide from the ArchiCAD Help Center. They can help to understand the new workflows.
