I've attached a polyline trace of a site mesh object that shows it's profile. Grades need to be adjusted to match the second profile. Does anyone have experience with this? What is the best method?

Lindsay,
Don't forget to keep a copy of the original site on a layer
site.existing
Make a copy of this site and put it on a layer
site.new
(layer names are just to be clear, use your own nomenclature)
This allows you to:
- do volumetric comparisons for cut/fill calculations
- restart the new site if you mess up or change your mind about the design....

Check out this link. Has a lot of information and a link to an Australian site that has a tip which shows how to manipulate meshes.
