Does anyone know if it's possible to edit a parameter in a custom text label by just double clicking on the text rather than going into the object definition dialog and changing the parameters there?

Not that I am aware of.
The label is an object so you must open the settings dialogue and change the parameters in the parameter list.
The only exception to this that I can think of is if the label is showing the element ID.
In that case you can edit the ID directly in the info box.
