Not odd at all - I believe it's the best way to go. It allows creation of rebates and chamfers etc.
Once the facias and soffits are in place I use them to cut the rafters using s.e.o. because the rafter objects never seem to terminate in the right place to begin with. I make similar cuts using beams as purlins and wall plates so that by building up the elements like this the resulting sections need little or no 2D "adjustment"

Profiled walls can only be level, but you can use an inclined profiled beam.

One can only wish.
To give credit where it's due, I believe that Graphisoft have given us the tools to do this job quite well with profiled walls and beams. That wish is very old and AC 10 now copes pretty well with facias, cornices, friezes or entablatures in my opinion.
To have a specific tool for all the less common parts of the building would become very cluttered and I feel that it's better to make more imaginative use of the modelling tools we have.
