Stair - up/down text

How would I show the stair up/down text in views of different scales?

In views of 1:100 and 1:50 it's necessary to show the text, but in scales 1:200 the text is too big and I'd like to not show it.

But if I remove the text in the stair settings, it's removed in all the views.

Rather than controlling the display of the text in the Stair settings, you can use MVO. Under Stair Settings > Floor Plan Display > check by Model View Options, then edit your MVOs to turn on or off the Up/Down Text (under Stair Options) for different Views.
