What do I need to do to see the zone colour on the story plan?

You can turn on the coverfills in the slab settings and turn on cover fills + use fill from surface.

This will display the fill connected to the surface. (cover fill foreground)

I think that  I am doing something wrong...

Cover fill foreground = Vectorial hatching (in AC 26)

Make sure you don't override these settings with graphic overrides.
