I'm finding it difficult to compose a view, since the camera is so unpredictable.

The best way, I see, to achieve what you want is to use the Explore Model function...
and make sure Fly is not activated. That is, hit the F key until you see the F:Fly button at the bottom of your 3D window unindent. Now the camera height is locked.damn! i hadn't realised that was what it did! thanks link!
