It's basically the way you did it in AC4.5, 6, 7 etc. We're still hoping though, it's bound to be restructured one day.
This manual can help... just know it is tedious and painful. You just have to dive in and once you figure it out it is pretty straight forward and repeatable. The steps are clearly laid out on this little manual, well... somewhat. Don't forget the manual under the help menu.
