I have recurring weird issue with dimension styles. I wonder if anybody ever had the same problem?
Some of my dimension styles are "broken": If you want to assign it to a view it won't stick no matter how hard you try.
Happens in every version to my knowledge, even in 30.
I recreated the affected dimension styles, but it keeps happening, so I'm really wondering what is going on here.

Strange glitch.
For me, it works in Archicad 29 without a problem.
So, what I see is that after you modified the Dimension Settings, then you try to redefine the settings of the View with the current settings (00:11 in the video), and instead of the View picking up the current settings ("2|..."), the Dimension Setting in the Option Bar at the bottom changes to the Dim setting stored in the View ("3|...").
What happens if you go to the View Settings Dialog, and instead of changing the Dimension field as you do in the video at 00:16, you click the Get Current Windows's Settings button at the top? Does the setting stick then?

No, this style is just broken and it can not be set in any way (except for when you generate a complete new view with that style).

I have reported it to Support.

thats a strange one... I'll keep an eye out for it. I have seen glitches with layer combinations, and especially with MVO's (those STILL go missing). So it's not surprising that dim styles also bug out

I tried this and I actually could recreate this, but it's not very clear where the problem is. It's definitely a bug somewhere.
I recreated it with a simple new file in the base INT template. So I don't think it's file based.
It's a bit hard to spot why it behaves like this though, because sometimes it randomly starts working again.
My best guess so far, is that this behaviour happens when you open a file and try to change a view map without having any project map engaged, meaning you didn't click the ground floor before making the view map.
Another giveaway is the fact that you don't have the warning ⚠ symbol on the right side (view map side) after you change the view point settings.
It normally notifies you that the view map is different from the selected view point.
