Plot Flow in OS X-Where's my AppleTalk?

In OS 9 I can configure Plot Flow to use any AppleTalk printer but for some unknown reason, at least to me, the OS X version can only do IP printing and USB.
We have an old Blue & White G3 running OS 9 that we use specifically for our Plot Server; it allows us to track plots via the log (as long as the layout names have a job number or name in them) and works just fine. We just got a new Kyocera Mita KM-4850w plotter/copier/scanner and it works great with Plotflow in OS 9. We would like to clear the decks and donate all of our old machines to charity but since I can't see the Kyocera as an AppleTalk printer, which I can in 9 we may have to keep this old dog around.
Anyone know a workaround for this or at least why Plot Flow seems to have lost the AppleTalk functionality in the OS X version?
