ArchiCAD uses 2D symbol to represent it on the floor plan. It's separate 2D GDL element called "Stair Grid". Try to set background fill for it in Stair Grid Settings. I'm not sure you can set position of the fill there. If this doesn't work - then just use 2D fill that will represent the bricks.
