The Java version will come into effect when you are installing Archicad, probably un-installing and repairing as well.
But as far as I know it has no effect on Archicad once it is installed.
In the past I have had to install new Java version to install Archicad and then I have removed it because that new version of Java was incompatible with other software needed on the machines.
Once removed Archicad still ran fine.
I just couldn't update it without installing the new Java again.
So that is why i would delete ALL Java from your machine.
Install Archicad - it should install the Java version required.
And then if you need to you can update Java to another version.
This next bit of info will not help you, but I believe that the installers for the latest Archicad do not use Java at all.
