In 17 and 18 it is all based on the Building Materials that you use.
You select a Building Material for the fill rather than just a fill pattern.
If Legacy mode is turned off they should all interact based on their Building materials.
If your complex profiles are placed in their own layers you can control the layer priority number to determine if they will trim with elements in other layers or not.
