Go to the Document\Set Model View\Model View Options Dialog.
In the Override Fill Display panel there are settings that could have caused this.

Please also note that Model View Options are saved with Views so when you apply a View the fills might change again. The solution to that is to check what Model View Options Combination is saved with the View and then redefine that Model View Option Combination to the fill settings you need.

You could have also changed the pen set used. Often templates have a modelling (colour) and a printing (black and white) pen set.
