I would like to make Story 0 (Lobby) the reference level for my dimension levels, so that the Lobby level becomes +0.05 instead of +1.05. How can I adjust the reference level so that the elevation dimension starts from Story 0?

You can set a seperate custom reference level in Options > Project Preferences > Reference Levels. Offset that by the 1 meter needed and you can set your level dimensions to use the custom level instead in the Text Content either as single value or as a custom text.

Or set storey zero to 0 instead of 1000,
But that is probably a bit late now as you would have to adjust all of the other storeys and then move any annotation you have added to sections and elevations.
Probably best to use a reference level as Erwin suggests.

I think project zero (and story 0) is being used as some sort of real world level dimension and it's probably a pain in the behind to change it now.
We use a reference level for the real world level dimension, since this is generally a flexible level throughout the span of a project.

I have another problem
When I move the slab down by 5 cm, the level dimension doesn’t update automatically it still shows +0.00 instead of -0.05. How can I make the level dimension automatically update to reflect the new slab elevation?

You did use the 'Level Dimension Tool'?
If so make sure it is not set as 'Static' or custom text.
It will associate to and adjust with the slab.
