What's the best way to model standing seam cladding?

I wouldn't if you don't have to.
It will add many more polygons to your model, potentially slowing it down.
For 2D documentation, add a hatch to your surface material that represents the standing seams.
For 'fake' 3D create a surface material that has an appropriate standing seam image.
For real 3D if you want the actual seams to stand out, you are better off to use a wall/roof add-on.
This way doors & windows will automatically be cut from the cladding and it will follow the shape of your walls and roofs.
Otherwise you have to use an object and stretch it and cut holes in it (Solid Element Operations).
Search in your objects for 'Profiled Sheet', 'Cladding', 'Standing Seam' or similar.
There should be an object you can use, but it won't be easy.

Hmooslechner made a wall accessory a while back which you could try using. I think it used complex profiles. There is a thread somewhere here about it.
