Look into this multi-plane roof a little deeper.
Have a look at the movies in the you-tube channel in the HELP menu.
Even with the multi-plane roof you can adjust each roof plane separately (left click on the pivot line and choose the "custom plane settings" in the pet palette to adjust the pitch).
It edits very much like a polygon so you can easily reshape your roof.
Drag a ridge (using the pet palette options) and the pitch on each side will adjust automatically.
Drag the end node of a ridge and you can easily create a gable.
There are many editing techniques which is why it is good to watch the movies.
Having said that a multiplane roof still can't do eveything (overlapping roofs can be a problem for instance) so as Dwight suggested you can convert back to single roof planes and edit them as you did in previous Archicad versions.
Just be aware when you convert to single roof planes the automatic connections are still in place and one roof above another will automatically trim the roof below.

Now, with 16, Archicad seems to see the entire roof as one big unit. I can't raise or lower one plane or change its pitch, etc, without adjusting the entire roof and all its forms. I have noticed that I am able to stretch any one plane but that isn't nearly enough for full flexibility. Do I need to draw the entire roof, plane by plane and then trim each intersection?
