I would suppose it is 'easy' in ArchiCAD21 with new fancy stair tool.
ArchiCAD20 and before that, require you to use either the parametric object like stairs or the stairmaker.
If the parametric stairs won't do it, I would probably make the steps/treads part of the stair with stair maker and model the stringers seperately with a complex profile wall.

I haven't tried 21 yet, so someone else will have to chime in to answer that. Have you looked at the ArchiCAD Youtube channel? There have been quite a few videos posted there already about the new stair and railing tools, with new ones popping up every so often.

I think the settings you are looking for the structure is the Beam not stringer, then make 2 beams and adjust settings as needed.
Is quite simple, but one make think that you would get this with stringers
. but not, you have to use Beam structure.

Set the Beam option for Flights, and for the Beam, use the "Open Stringer" GDL Object. That will give you the shape you wish to achieve.
Use 2 "Open Stringer" Beams and set their position to the sides of the Stair as arqrivas suggested.
