How do I make the 1 story show the pool correctly so that it is below the roof in plan view. see screen shots

Select your roofs and activate the Cover Fill under the Floor Plan and Section panel. Then choose an appropriate fill, maybe even an empty with a white background, to mask the information below.

Is that the look you're after?

It depends on what you made your pool with. You may have to bring your roof further up in the Display Order. The default order is this:

1 Annotation (Text, Labels, all Dimension types, Zone Stamps)
2 2D artwork (Lines, Circles, Splines, Hotspots)
3 Library Parts (Objects, Lamps, Stairs)
4 3D structures (Walls, Beams, Slabs, Doors, Windows, Columns, Roofs, Meshes)
5 2D polygons (Fills, Zone Polygons)
6 Figures

To bring your roofs further up, simply right click on them Display Order>Bring Forward. Alternatively you can send you pool down in the order.

In the future, make sure that the roof is on its own storey.

The rule of the thumb is simple: even if it is not an actual storey, if you need a plan showing that level, that is a storey. A lot of stuff can be solved with this approch. For example, you would not have had this problem.

Would using the 3D cutting plane help you?

How about adjusting your Floor Plan Cut Plane Settings for that view only?
