what controls the difference between the 2 images below? having difficulty understanding all of the different override variables, layer combos, and other various features that AC is cluttered with and just trying to simplify my process.

Operating system used: Mac Intel-based Sonoma 14.4.1

Try going to Elevation Settings > Model Appearance > Uncut Elements > Uncut Fill and play around with that setting.
