Is there a way I can just set the default for Grids to always be off so I don't ever have to do this again? It's making me nuts!

Same here. Never, ever use grids and always wondered why Im still having to turn them off. There should be a master switch to permanently disable them.

If you never ever ever never ever use them, you could just change the grid colour to background colour and never see them, regardless if they are on or off.
Not the same thing, but end result would be the same.
View > Grid Options > Grid & Background

Hi! The Grid display switch is stored in the Viewpoint (not the View). This means, You have to turn it off separately for Floor plans, each Section/Elevation, each Interior Elevation, each Worksheet, and each 3D document, otherwise it will use the default option.
You can change the default by creating a single one of each Viewpoint, and then turn the Grid off for each Viewpoint type separately, from the "View/Grid and Editing Plane options/ Grids and Backround..." (Not the Quick switch from the View Menu). This will set the defaults to off, so every new Viewpoint should use this setting. You can save this as a Template.
There's a faster, but slightly riskier way in ARCHICAD 19. You can change every existing View and defaults to off with a special menu, but it Requires changing the Registry/Preferences settings, which is not recommended for unexperienced users.
You have to change the Special Menu Registry key to 1/true, and then in the Menu section of Work Environment Settings, you can envoke a Special Menu called "Turn off All Grids". Place it in your menu structure, and click it. This should set all defaults to off.

Note that Graphisoft doesn't take responsibility for errors regarding modifing the Registry/Preferences settings.
