Profile overrides in AC21 are buggy

I noticed after switching a project from AC20 to AC21 a bunch of my complex profiles seem to be a bit buggy. The overrides I had set up in 20 are messed up and I can't seem to recreate the same overrides I had even if I build a new profile from scratch. I have tried changing the line types both through "Custom Edge Settings" and through "Uniform Profile Contours" but the resulting profile does not reflect the overrides I am trying to achieve.

For instance I have a rectangle with an X through it. I want the outside of the rectangle to be a thick black line and the X to be a light gray line. I make up the profile of four triangular fills and then using "Custom Edge Settings" I select each of the inner lines and change them to gray. The resulting profile changes depending on which order I select the fills in, and it is unpredictable which lines will be gray and which will be black. Similar with "Uniform Profile Contours".

Is there something different about complex profiles in 21?

Could you post some screenshot about the exact nature of the problem?
Maybe also a comparison between how they look in AC20 and AC21?
