I would use roof planes since they produce a predictable and controllable thickness as well as controllable edge angles - for smooth meeting edges. They can also easily be refined in 3D after initial placement.
You CAN create your basic form with a mesh and later CONVERT the mesh into roof planes using an Add-On downloadable from:
http://www.graphisoft.com/support/archicad/downloads/ac16/INT.html
As for steps: place the planes individually and grow the structure by alternating between placing in plan and tuning in 3D.
