I understand only Structural-Grid. It's grid.

I assume "Structural - Bearing" would contain load bearing structural elements, id est Walls, Column, Beams etc.
The other two: I don't have much idea.
But those Layer names are just something to start with. If you don't need them, you can just ignore them or even delete them. Or rename them to something you need for the classification of your model data using layers.

Well as Laszlo said, Structural-Bearing would be to carry a load (from above).
Structural-Shear would to resist lateral forces. i.e. shear panel or lateral brace.
Structural Combined is open for interpretation, but I think it simply means you show both Bearing and Shear elements, or it is both bearing and shear in one structural element or your just simply showing them both in that layer/view
