It is possible to select the text only in a dimension string - and edit it. You must first place a dimension string, then edit it. The hot spot is around the lower left of the text in the string - I can't remember for sure, but I think if you turn on "text handles" in the display options, the handle might show up and be easier to find. If you select the text and then (keyboard short cut) -> command + T, (mac) - you are able to edit the text.
