Can someone explain to me how I can edit the corner of a stud created as a complex profile using offset modifiers?

I assume your image is a plan view?
i.e that is a complex profile column?
What are you trying to alter?

Correct, I am trying to get the top left and the bottom right corners to basically be cut off even with the bright blue (base plate and top plate).

Modifiers can not modify a single node affecting two edges.
They can only push/pull the entire edge, they can not rotate that edge.
But you don't need a modifier to do that, just adjust the width/height by turning on the width and height stretch options.

If you have a consistant angle, you could add an angled nib to your profile.
When set to zero, it will disappear and you will have your standard rectangle..

As far as I know, there is no way to adjust the angle.
All you can do is have a modifier on the edge so you can enlarge/reduce the bit sticking out as Ling has shown in his image.
So if the angle of the stud and the bit sticking out is always the same that should work.
But if the stud is going to be placed at different angles to the wall, then you really need a custom column for each instance.

In such cases I use a wall or beam with a thickness of 1mm and I set in the proper angle to connect. Really simple. No need to convert to morph.
