The default Complex Profiles seem to do what I want but I can't find what it is that tells Archicad to show a particular contour line.

Anything below the cut plane is shown as long as the wall is set to "Projected" or "Projected with Overhead."

There is no setting for the uncut line type. You are stuck with continuous lines for anything that is projected.
