I constantly face that discomfort when i want to create different floor finishes e.g. tiled floors, wooden floor etc. on the same construction slab. I have 2 options: to create multiple composites and arrange them like a puzzle or to set one construction slab and add separated finish slabs independently above it.
First option is not the best one as dividing load bearing slab into pieces doesn't work well and is unbearably uncomfortable and the other option creates overlapped slabs on each other and makes it hard to work and makes it easy to make mistakes.
I wish there was an option to define general slab contour first and later define finish surfaces inside the slab. that would have made the tool so much professional.
Operating system used: Windows 10

Have you tried the slab accessory? It might work.

I don't disagree with your wish, if something could be worked out, that would be nice.
But remember the old motto 'model it as it is built'.
You build a floor slab and the finishes to each area are applied separately.
So model it the same way.
The TAB key to search through overlapping elements is very easy.
And don't forget you can turn the construction slab layer off while working on your floor finish slabs.
