It would be swell if there were a way to select multiple items using CMD-Click in PlotMaker, namely when it comes to multiple pens that one would like to alter to the same line weight, and in the Publisher, where one sets up a group of items to print in a specific fashion, and would like to select multiple, change print setup and print options.
any advice?!?

After that however, you can edit the individual layouts or even subsets so that there are different setups within the same set. What I think he is referring to is that when you select multiple layouts in the publisher while in a 'print' set, the buttons for print setup gray out. While it is possible to edit the 'plot' settings of multiple layouts at the same time. Definitely an annoyance.
In Publisher (and Navigator) the current printer settings globally control the output of Layouts. Change the print setting once and all of the Layouts follow those settings. Just create multiple Publish Sets to control.
